Crock pot beef shanks and broth
It was a pretty stunning day here in Northern Ireland, so after a long lie in, I got myself gathered up pretty quickly to head to the coast. Rushing out the door isn’t incompatible with having great food awaiting your return, though, as long as you have a slow cooker/ crock pot. So before I left, in went 3 bone-in beef shanks (a kilo’s worth for £3), a couple of bay leaves, an onion, a few sticks of celery and a big spoon of tomato paste:
All covered with about 1.5 litres of water, and left on low for 8 hours, while I walked around Killard Nature reserve, took in the sun, and had a dip in the beautiful clear but rather nippy waters of the Irish sea.
Greedily devoured with a microwaved potato upon my return.
Lots of delicious golden fatty broth left for tomorrow. Perhaps to be consumed with a dollop of creme fraiche for breakfast…
